Our products are an expression of good, typical Tuscan food. They are no-frills and genuine evidence of a farming culture that, with passion and professionalism, is handed down from generation to generation to bring goodness and taste to your table. Over time, our farm has been able to combine ancient traditions with the technological innovations necessary to diversify production and meet consumer tastes.

PROSCIUTTO

A product of excellence that is the result of selected, farm-raised pigs, skilful salting processes with high-quality products and slow curing. The colour of our hams, coated with ‘stucco’ (a mixture) and black pepper, ranges from bright red to light red, bringing a strong, bold and tasty flavour to the table.

Bresaola, capocollo, lonza, pancetta, spalla or speck: our cured meats are produced in faithful respect of a tradition handed down from generation to generation. The very short production chain, the quality of the selected meats, the artisanal processing and the long maturing process make it possible to offer excellent foodstuffs that guarantee freshness and authenticity.

With salami, salamelle, sausages and sbriciolone, our rich variety of freshly minced cured meats takes you to the heart of rural culture through ancient processing techniques. The skills of pork butchers, artisanal salting processes and slow ageing allow these cooked or cured specialities to acquire the unmistakable flavour of Tuscan tradition.

Our specialities include sgambato ham, i.e. high quality deboned pork legs. This delicately flavoured cured meat, harmoniously enriched with the unmistakable aromas of the Tuscan countryside, undergoes careful preparation and acquires its flavour through salting and a slow maturing period.

Intense aroma, amber colour, crispy crust and soft flesh. These are the characteristics of our suckling pig and busts, which are rightfully among the best-loved and most genuine traditional specialities. The pork is processed and flavoured by master pork butchers with a mix of spices and herbs, before going on to the slow cooking phase.

A choice of seasoned, semi-seasoned or fresh pecorino to suit every palate. Our cheeses are produced directly by the in-house dairy with fresh, genuine milk through a process that is completed in the maturing process that gives the product its sought-after organoleptic, olfactory and taste characteristics. These flavours go well with mixed flower, chestnut or acacia honeys from our bees.

Fresh cow and buffalo milk, full-bodied and rich in flavour, is processed at our dairy into caciottas, mozzarellas, provolas, ricottas and other cheese products. Fresh cheeses are identified by their sweetness, delicacy and digestibility, with characteristics that also lend themselves well to use in many different traditional Italian recipes.

Climate, position, soil and exposure, combined with immediate pressing, allow the production of an evo oil with unmistakable organoleptic properties. Our farm is surrounded by trees of different cultivars such as frantoio, moraiolo, pendolino and leccino where, between October and November, the olives are harvested and immediately processed in the mill using traditional processes to preserve the best quality. Our oil is bright green in colour, with a hint of spiciness, low acidity and an intense fruity and herbaceous flavour, ensuring a harmonious combination suitable for enhancing any dish when cooked or raw.

Eleven hectares of mainly Sangiovese, Merlot and Cabernet Sauvignon vines surround our farm in a favourable position 250 metres above sea level. All this encourages a varied production of labels to accompany every meal, including common white and red table wine, Chianti DOCG and IGT wine, as well as Chianti vinsanto and typical Tuscan grappa.

Our labels include:

  • Chianti DOCG: produced with a prevalence of Sangiovese (more than 90%), combined with Merlot and Cabernet Sauvignon, according to the strict parameters established by the regulations on controlled and guaranteed origin by the Chianti consortium.
  • Bianco – Fattoria di Rimaggio: a fresh, delicate and fragrant table wine made from a blend of Trebbiano and Malvasia grapes.
  • Rosso – Fattoria di Rimaggio: intense colour and full flavour for a table wine made from up to 95% Sangiovese grapes, supplemented by Cabernet Sauvignon and Merlot.
  • Monna Elisa: red wine of Typical Geographical Indication produced with a predominance of Sangiovese combined with Merlot and Syrah grapes, aged for at least six months in oak tonneaux.
  • Villa Pegna: Sangiovese, Merlot and Cabernet Sauvignon vines are combined in a full-bodied and enveloping IGT red wine with special organoleptic characteristics due to ageing in oak tonneaux.
  • Vinsanto del Chianti: a passito di caratello with Denominazione di Origine Controllata with a golden colour, intense aroma and smooth taste, an ideal pairing with any meal, including dessert.
  • Grappa del Chianti: aromatic fragrance, strong taste and harmony of flavours characterise a fine distillate made from the careful and patient processing of marc from our hills.
